Well, I've just carried out the rolled up newspaper test and was able to stop the viscous fan (with the gauge just a tad over 90) with just a little shredding of the paper! And, with the engine off, the fan turns easily by hand with the engine hot and cold. So, a knackered clutch seems to be a probable cause of the over-heating in traffic (and under load on steep hills on warm days), yes? The electric fan is running at 90.

Next question, is it an easy DIY job? And I don't mean easy by MJ's standards! And does anyone have instructions and a part number?

As to the gauge itself, it seems someone was having a laugh with it! It doesn't give you the coolant temperature, even though it could, and the divisions marked on the gauge are what exactly? There are 2 between 50 and 90, I don't know which one is supposed to be 120 and I assume that the red line just means 'oh s**t!' Someone went to the trouble of laying the gauge out with non linear divisions that mean sweet FA, it seems; er, 50,60,70..90? 100,110,120 (maybe),130,140? See photo below:
