So the Audi 6 pot 'ceramics' are Brembo 19z, which were also available on Porsche. Therefore surely regular pads for steel discs must be available to fit that caliper. Just need to find a 380mm steel disc with the correct offset for when the time comes to replace the ceramics to steels and keep the existing 6 pot caliper.

Just search the Brembo Gran Turismo Brake System Application List and they do a 380mm x 34 drilled. Part number 101.9003A
It's a two piece kit, but the original center bell from the ceramics could be used again for the correct offset for the D3 S8 As for the rears, just get W12 calliper carriers, W12 discs and regular pads.

Nice find, i see they also do other discs in the same size, not sure if the bells would match up though.

That's an even better find, a complete plug and play kit.
