Even if you manage to code the 3 heights, the struts are different in SE and Sport.

They are indeed but the S8 that was at the Wales meet from Germany is running a standard controller to enable the different ride heights and I think he has got it just right in regards to heights and practicality

You can simply change the speed thresh hold on vcds so that it will stay in lift at any speed then just change your mentality and drive in lift as normal mode, comfort as slightly lower and dynamic self lowering by 20mm after 70+mph for 30 seconds +++

The sport has actually has 3 ride heights!

Automatic / Dynamic are both the same height (-20mm) and both lower 5mm on the motorway (-25mm)

Comfort is the same height but doesn't lower on the motorway (-20mm)

Lift adds 25mm to the automatic level (so 5mm up)

The measurements are to the standard running gear (on Automatic & comfort)

You can also code in reductions (10-20mm iirc)on standard in VCDS, couldn't see why you could not add height there if you wanted?

Can anyone tell me if these part numbers are for the Quattro sport controller or the SE MODEL?

You've got two numbers there. One is a hardware number, the other is software. Is this from one unit you're looking at?

I can only check the latter 4E0910553H software number. The PR code for this is 1BK 4-corner air suspension with electronic shock absorption control, so this is not the sports variant. However it's best to check with both hardware and software number.
