RICKY im with you on this!, im also not very keen on my cream dash selection and wood trim, wish i could go back in time and slap the original owner with the owners manual, why didn't he/she choose timeless black!! it would have never aged! too much choice with these cars i suppose, one thing i am doing this year is to get all the wood trim carbon dipped to gloss carbon fibre, i think i would be much happier after that.
There was a black dash going on A8 parts i saw mint only £70, its just the amount of work needed to get it in sadly. maybe a good bodyshop would attempt it for you.
Door cards would be easy to change over, black with suede would be my preference, dash vents are easy to find, and black leather seats are easy enough to sort, even RS6 recaro C5 seats would be a nice touch hmm, i have also found a seat belt company that can change over belt colours if needed -

Another thought.. in very hot countries i've seen before dash board covers, stops the dashboard from melting in extreme heat, if it was possible to get a black cover that would be a nice touch but i bet impossible to find
HP is right perhaps you can get the dash leather trimmed loads of cars have this done just pick up a copy of VW performance mag, or audi tuner seems alot can be done these days
