It's all quite difficulty, logically.
My ideal would be:
Able to fold mirrors in while driving, and unfold obviously, for tight situations.
Able to decide before exiting whether mirrors fold on locking.
Unfolding I'm not too bothered about, but on balance I'd probably prefer that this wasn't automatic. I'm thinking of winter conditions especially.
There's a circuit that is live for a just short time after the ignition is off, used to allow window closure etc. - I used it on my PF for the add-on dimming mirror.
Ideally a "fold" process would be triggered if: door switch is in the "fold" position, ignition is off, that "delay" circuit is live and the car is locked.
So, the way I would use it is: Ignition off, key out, mirror switch to fold, get out, lock car. Mirrors fold.
If you were slow exiting, just unlock & relock the car with the remote.

e.g. Cruise control, NavPlus/TV, Bose, GSM, Xenons, Solar roof, Parking sensors, Alcantara/leather everywhere of course.  (internal dimming mirror added later)
1998 (very early) Ford Focus 1.8 Zetec; ABS/TCS, Heated screen/mirrors, Aircon. Added Auto-dim mirror, Leather seats, Trip computer, Cruise control, OEM Ford SatNav with CD changer.
And before that a lot of Rover 800s, a few oddities, a lovely Triumph Dolomite 1850HL with Overdrive and way back in my schooldays an Austin Seven aka Mini 850!
