Mine's a 2002 S8 too, so I assume it's the same fitting.

To remove it, first from inside the car retract the roof panel cover and, at the front of it, you can just see 2 clips. Push these apart with your finger to release them and then push the roof panel fully back.

On either side of the sunroof (use a torch) you can see the heads of 3 torx bolts. These are the ones that keep the sunroof in place and allow height adjustment.

It's hard to find a comfortable position and you need to be careful not to drop the bolts, but apart from that - simples!
