On fully warmed up car I also have around 80C (this is when the sensor behaves).

I made more measurements today during driving and sometimes temperature starts to jump absolutely abnormally. I had no chance to make a screenshot with a graph, but it looks quite random. Then returns back to steady state at around 80C. When it jumps to 155C the gearbox shifting strategy changes.

Need to change sensor.
