I agree - in my opinion, the ergonomics and looks of the standard three-spoke Sports wheel heavily outweigh the "convenience" of controlling the audio from the wheel with the four-spoke MFSW. To some though, it could be a God-send.
The flat-bottomed B7 RS4 steering has twin-stage airbag, and so is not
directly compatible. But it
can be fitted, and wired correctly to a single-stage chassis.
