Ok did some diag. Opened the lower heater hose vent and some air bubble mixture came out. Not a lot, but bled it until it was just liquid.
Next I checked with thermocouple probe. Temperatures match what vag com are saying, so it is not sensor. Then I decided to touch lower radiator hose. Stone cold. So this means thermostat or water pump? Both are brand new, I highly doubt it is water pump. If either of these failed I would expect some massive over heating issues. Is there any better way to burp the radiator or coolant system in this car? I feel like a huge air bubble is between the thermostat and radiator even tho this does not make sense either Edit: Heat is fine. Not as hot as I would expect, but it does blow hot air. Both heater hoses are hot.

Sorry don't think thats available in vcds, might have the specs in the manuals though.
Have you had a look at the manuals here http://forum.a8parts.co.uk/showthread.php?t=9345

I tested the old thermostat and it opened at the correct temperature. Now I am really at a loss. There was also coolant in the thermostat housing and lower heater hose. I'll try flushing the radiator again, then I'll be stumped.

What's shown on the dashboard?
The reason I ask is I was sat in the car for a while the other day while building a label file for my engine, I noticed that my car also sat at a solid 105 on VCDS but shows a steady 90 on the dash so it may be designed into the car

It is an 03 so it does not have numbers on the coolant gauge, but it moves from the "middle thick" line to the next tick over to be at more 12 oclock or 12:30. The deadzone on my instrument cluster is 80-100 degC, after 100 the needle moves up. When you are on the freeway or accelerating, what does your vcds say?
I also replaced the coolant temp sensor and I also ran a hose thru the radiator and it did not appear to be clogged. The lower radiator pipe is still cold while top pipe is super hot which makes 0 sense to me. While accelerating I get 107degC, at idle I am at 100degC.

I was gettin 105 to 107on VCDS at idle but the temp gauge stayed steady at 90, when I go out in the car next I will log the engine temps

I'm starting to lean towards a clogged radiator.

It would need to be seriously clogged to stop all flow from engine, it will be quite easy to check but you say you done already, when was the water pump last replaced?
