some fluid types are not compatible - brake fluids to different standards can destroy caliper seals if used in the wrong application.
Used to work with a Lucas Girling brake engineer who basically said unless you were going to a silicone based fluid to stick to precisely what the manufacturer specified to avoid the risk of incompatibility. I'm sure you're correct at a practical level as the DOT5 on fluids are I think silicone based but I'd rather not take the chance.

It's just really old cars that cannot use modern brake fluids and has risk of damaging seals. Unless you have a classic car it will be at least DOT3 and you can put DOT4 or 5 in it.

Hydraulic fluids can be mixed fine. However, synthetic hydraulic fluid can't be mixed with regular.
