Does the esp brake the wheel with least traction to force torque back to the opposite side of the diff?
Yes, ESP brakes the wheel which start spinning. Pre ESP like mine and Dezzy's does the same with EDL but only at slow speeds and does not reduce engine output. Brake force is limited so if you have one wheel without grip at all (in the air) you are still not going anywhere.

Don't know what the internals are made from, can you weld the diff up? Rear anyway. Or i suppose just buying a real off roader like the Land8 would be easier.

We did it once on Mazda 626, front diff that is as that's the only one it had. It broke on the Mazda we were just having fun with in the fields so we welded it up to keep car going. Man was the steering heavy after that, no power steering, you could grow arms like Popeye driving it.

Mk2 Escort with a 1.6 Kent (i think) engine, diff welded up. I thought i was Jimmy Mcrae.

And now it's all popular again but called "drifting" and not being a "nob head"
