You have the same phone as me, you cannot pair anything with it except the Bluetooth handset in the car.
Essentially the car is a telephone in its own right, and you cannot pair another telephone with it only dumb BT handsets. After upgrading the MMI software, I put an O2 PAYG card in with some credit on. When I am in the car I redirect incoming calls to that number, and it obviously works fine for outgoing with credit on the PAYG sim. Before I upgraded the MMI, the sim card was rejected as invalid.

Orange were the only network that used to offer (business users only) a pair of sims which linked. I had one in my A7 sim slot and the other in my phone and you could nominate which sim was the primary and which was the secondary. I had my iphone as the primary then when I got into the car turned it off and it automatically defaulted to the Car sim instead. Not sure if EE still offer the option now though
