Probably depends entirely on how long they spend going lockstop-to-lockstop and driving it about to remove air from the system. When the fitters are 'encouraged' to get a car out of the workshop ASAP it makes sense (to them!) to do the minimum. get the owner to do the donkey-work and then finish the job when it comes back....

They should be able to fill a power steering system like a brake system, using vacuum.
I mean, they're not going to give you your car back after a master cylinder or ABS actuator replacement and say "here you go mate. Drive it round for a couple of weeks, and don't forget to pump that middle pedal a few times eh. When you come back we'll get rid of any air left in the system. Any failures, come and see us"!

Unless Audi power steering systems have fundamentally changed since 2005, they are self-bleeding simply by using it. I'll be re-filling the system on Neil's 3.7 in about an hour after a rack swap yesterday and all it needs is to swing the steering from side to side 3-4 times and it will purge any air out on its own. Conceivably it could require a top-up in after driving it home, but there's nothing to do after that.

Thanks for that MJ, I thought I'd read something like that ages ago which is why I posted the question here.
Does make you wonder what on earth they did and why it went wrong after a couple of weeks?

2016 Volvo V40 T5 Cross Country (4WD) with ALL the toys including adaptive cruise etc. etc. Osmium Grey with Blonde/Charcoal leather interior. Polestar performance "optimisation". (A much rarer model than a D2 S8 by the way!) Oh, and a brand new engine at just under 30,000 miles on the factory one!
Finally: gone, but not forgotten.....
1998 D2 PF S8. AgateGrey/Platinum. Every option (I think) except electric rear seats, tiptronic steering wheel, ski hatch, towbar & dimming door mirrors.
e.g. Cruise control, NavPlus/TV, Bose, GSM, Xenons, Solar roof, Parking sensors, Alcantara/leather everywhere of course. (internal dimming mirror added later)
1998 (very early) Ford Focus 1.8 Zetec; ABS/TCS, Heated screen/mirrors, Aircon, Auto-dim mirror, Leather, Trip computer, Cruise control, OEM Ford SatNav with CD changer.
And before that a lot of Rover 800s, a few oddities, a lovely Triumph Dolomite 1850HL with Overdrive and way back in my schooldays an Austin Seven aka Mini 850!

Neil definitely didn't skimp on the chocolate We finished about an hour ago so Neil is on his way home and I am stuffing my face

It was just 3 turns lock to lock to bleed the system btw.

And now it's gone wrong again, on a Sunday morning. My son is livid!
Basically he was doing a 3-point turn and it froze (lost assistance) while on full lock. Managed to get back home and onto his drive.

I've talked him through checking the reservoir - seems to actually be above max! He says there's a lot of fluid around it, so maybe they overfilled it?
I've also suggested he tries the lock-to-lock process a few times, probably while moving slowly as he has no assistance at present, to see if that changes anything.

He's now going to have a rant at Chingford Audi, who are allegedly there (probably only in sales though) to 4pm today.
