I can’t think of anything particularly memorable you can configure that you can’t also do through the touchscreen. Things like adding the RVC require ODIS rather than VCDS
one thing worth doing when scanning that car is to take the tick box out of (IIRC) UDS aggressive mode before running an auto scan. From memory it’s always pre-selected and in my experience with the Golf it can result in unexplained fault codes which make no sense. This was the recommendation when I asked on the VCDS forum
